Christmas edition
How Panevo was born: a Christmas cake built around our Peranzana extra virgin olive oil.
What if, instead of butter, we used the thing we know best: oil? That is how Panevo was born, an artisan panettone made with extra virgin olive oil.
Panettone has always been a butter cake. We chose the ingredient we know best: our Olio del Poeta, a monocultivar Peranzana with a medium fruity taste, herbal notes and an almond finish. A delicate oil that supports flavours instead of covering them.
In Puglia, after all, oil in desserts is nothing new: in country homes it replaced butter, which was a luxury. Panevo brings that peasant tradition into a great Northern cake.
Our Peranzana olives reach the mill within six hours of picking and are cold-extracted below 23 °C, to preserve the 652 mg/kg of polyphenols that give the oil its character. Using it in pastry seemed the most honest way to introduce it: whoever tastes Panevo tastes the same oil they put on their salad.
Panevo is made in collaboration with a baker awarded by Gambero Rosso among the best artisan panettone makers in Italy. Sourdough and a long rise: it is time, not shortcuts, that gives panettone its structure and aroma. We bring the oil and the recipe, the baker brings the craft. The result is a natural product, with no colourings or preservatives.
With extra virgin olive oil the panettone is lighter without losing indulgence. Two flavours out of three, citrus and dark chocolate with sour cherry, are also lactose-free. The three-chocolate one contains lactose (milk and white chocolate): we state this clearly on every product page, with ingredients and allergens.
Citrus, with candied orange and citron; dark chocolate and sour cherry, for an intense taste; three chocolates, the most indulgent. Each panettone weighs 750 g and comes in a box ready to be given as a gift. Enjoy it at room temperature, in generous slices, with coffee or a sweet wine.
Panevo is a seasonal product in limited quantities, available by pre-order only: shipping starts in early December and orders stay open until mid-December. It costs €35. Full ingredients and flavour choice are on the Panevo page.
A panettone that tastes of Christmas and, deep down, of olive oil.
